Muffins Attack!

I noticed that I’ve been posting about muffins for… OMG continuously 3 posts already! I’m so sorry but the genius here is having such a HUGE muffins attack that she is almost baking everyday! >.<

How Good Are The Muffins?

I baked another batch of muffins yesterday. This time, just basic ones with raisin. Everyone loves it even more – of course including the my niece, the number 1 fan. Darl a.k.a the Unofficial Muffin Professional gave 80 over 100 for them. :)

Trees And Greens.

We went to a nearby nursery yesterday, hoping to get a bunch of nice bamboos for the garden. For some reasons I’ve been thinking a lot about being green lately. I’ve started working in the garden, throwing seeds into the soil, and making compost. I’ve been watering the plants twice a day. I’m not so sure why, but I do know that doing these things that I used to not enjoy are making my life… better.

I read in the newspaper today on a small team/company somewhere in China who is also making similar banner bag that we have been doing. The only difference is, they’ve gained a certain recognition. This does make me a little sad. I’ve been working a lot developing our banner bags but some people are already being famous with it.

But I do admit that I haven’t been able to commit fully developing all our product lines. It’s a little too heavy and too much for my two little hands and a single body. Perhaps I should really reorganise my time and effort.

P/S: We did get a bunch of pretty bamboos yesterday. Planted in the garden when it’s still raining, with the help from grandma’s maid. She has been my best garden pal so far. :)

Yes I’m Really Proud Of Myself!

With the amount of work piling up when my iMac was away, I really shouldn’t be doing this today… but hell I kept having the thought of making the perfect muffins so I took an hour off from work and made these. >.<

Six blueberry muffins, with the leftover ingredients from yesterday! And the most important part is, everyone said they are better than those from yesterday. Nicer texture (still with room for improvement), perfect brown!

And so here are some secrets to get your perfect muffins *ahem I’m saying as if I’m pro already!* You can’t over mix the batter. 10-15 strokes, maximum. Also, after some researches online, I realised that there are actually 2 main types of muffins, English and American. The one we normally have here is American (of course…). And there are 2 types under American, cake-like and bread-like. I found a really great site with a lot of baking tips and information here. If you go under muffins, you’ll find the detailed info on differences between the types of muffins there.

My little niece LOVES every single piece of my muffins. So tomorrow, perhaps, I’ll make raisin muffins. MUAHAHAHAHAHA!!! *attacked by raisin poison*
